Paleo Blueberry Coconut Pancake

Ingredients
2 Eggs
Small Banana (mashed)
1tbs Gluten/Grain Free Flour (Coconut, teff)
Splash of Almond or Coconut Milk
Pinch of baking soda
1 tsp vanilla essence
Handful of blueberry’s
(2 tbs of cocoa powder optional)

Toppings: Coconut yogurt or ice cream, paleo granola, fruit

Method
– Put everything in a blender or use a hand whisk, secret is to not over blend
– Heat a small amount of coconut oil on a medium heat in a small frying pan
– Pour in the mixture until a light, even amount covers the pan and drop in a small handful of blueberry’s.
– As soon as the middle begins to bubble and the underneath has gone slightly brown, it should be easily flipped and cook for a remaining few minutes before serving.
